Pizza Bites - compared to normal sized pizza, are way easier to eat without making a mess. Because of their convenient one-bite size, different topping combinations can be enjoyed in a single meal. They are perfect as snacks, side dishes or as additions to lunchboxes and can be eaten on the go or for a quick treat. In Italian they are called "pizzette".

Ingredients for Pizza Bites
The Ingredients for Pizza Bites are simple. The sauce ingredients are included in this passage.
Pizza Bites Dough
500g flour (4 cups)
250g water (1 cup)
10g yeast (1 tbsp)
60g olive oil (1/4 cup)
15g salt (1 tbsp)
12g sugar (1 tbsp)
Classic Topping
For the Tomato Sauce
350g canned tomato sauce (1,5 cups)
1tsp salt
olive oil (to taste)
oregano (to taste)
pepper (to taste)
For the melted Cheese
250g mozzarella cheese (2 cups)
Note: The cheese should be chopped or shredded.
Instructions
How to make PizzaBites
Step 1 :
Mix flour, yeast, water, sugar, salt, olive oil in a bowl. Once all ingredients are incorporated, kneed the dough until it is even.
Note : Kneeding can be done either manually or with a machine.
Step 2 :
Let the dough rest and rise for 3 hours at room temperature.
Note : The dough should have doubled / thrippled its volume.
Step 3 :
Roll out the dough and cut out small circles with a cookie cutter. There should be atleast 20 dough circles.
Note : If you don't have a cookie cutter, you can also use a glass or bowl, upside down.
Step 4 :
Add tomato sauce and mozzarella cheese. Then bake at 200°C (392°F) for 15 minutes.
Step 5 : Serve
Once the pizza bites are baked, they can be served on singular plates or on big boards for festive occasions.
They can also be stored in the fridge for 3-4 days and reheated.
Advice : If they are reheated, adding fresh cheese on top and reheating in the oven is recommended.
How to make the Tomato Sauce
Step 1 :
Preparing the tomato sauce is simple. In a bowl, combine the canned tomatoes with olive oil, salt, some oregano and pepper.
Advice : Prepare it shortly before applying it on the dough.
Variations
There are many great variations for pizza bites. The most trendy ones are listed below.
Bacon - / Salami Pizza Bites
Prosciutto goes well with mushrooms combined or even just with cheese.
With Bacon as Topping, a Carbonara-similair flavour could be created by adding egg and cheese.
Salami goes well with peperoni if a more spicy version is intended.
Cheesy Pizza Bites
Other cheese options such as mozzarella di Buffola, Parmeggiano Cheese or Gorgonzola could bring out stronger flavours.
Pizza Bites with Vegetables
With Vegetables a lot of combinations are possible. Because vegetables are not globally as trendy on pizza, this passage remains short.
Examples are mushrooms, zucchini, eggplant, spinach, pesto, peperoni, potatoes and fresh tomatoes.
Simplified Version with Puff Pastry
Sometimes, making the dough at home is too time consming. Therefore puff pastry can also be used for a very similair end result.
